Hand harvested, cold soaked, fermented in stainless steel, and aged seven months on lees without oak or filtering. The result preserves the deep mineral core while displaying ripe apple, pear, exotic pineapple, and subtle fennela distinctive white that balances ripeness with briny minerality.
